Ingredients

1 package fresh baby spinach
12 large strawberries, washed, towel-dried and sliced
Toasted almond slices
Mandarin orange slices, without syrup
1/3 cup diced red onion
Feta cheese crumbles
1/2 cup white sugar
1 teaspoon salt
1/3 cup white wine vinegar
1 cup vegetable oil
1 tablespoon poppy seeds

Directions

  1. In large serving bowl, combine spinach, strawberries, almonds, mandarin oranges, red onion and feta cheese crumbles.
  2. In blender, add the sugar, salt, vinegar and oil. Blend until smooth. Pour over spinach salad, mixing to coat. Enjoy!
