1 package fresh baby spinach
12 large strawberries, washed, towel-dried and sliced
Toasted almond slices
Mandarin orange slices, without syrup
1/3 cup diced red onion
Feta cheese crumbles
1/2 cup white sugar
1 teaspoon salt
1/3 cup white wine vinegar
1 cup vegetable oil
1 tablespoon poppy seeds
- In large serving bowl, combine spinach, strawberries, almonds, mandarin oranges, red onion and feta cheese crumbles.
- In blender, add the sugar, salt, vinegar and oil. Blend until smooth. Pour over spinach salad, mixing to coat. Enjoy!
