Reader’s Recipes: Spinach Ricotta Cheese Quiche

Spinach Ricotta Cheese Quiche

1 8-oz. container Ricotta cheese
3 eggs, beaten
½ c. Parmesan cheese
6 tablespoons milk
1 box frozen chopped spinach, cooked and well drained
Salt and pepper to taste
1 pie crust

Directions

  1. Beat eggs into Ricotta cheese. Add
    Parmesan cheese, milk and spinach.
  2. If using a frozen pie crust, preheat. Mix
    ingredients well and pour into preheated
    pie crust.
  3. Bake at 400 degrees for 10 minutes. Dot
    with butter and sprinkle more Parmesan
    cheese on top before baking further. Then,
    bake at 325 degrees for 45 to 60 minutes.
    When knife inserted in center removes
    clean, it’s ready.
  4. Garnish with sliced tomato if desired and
    sprinkle a little basil.
